Blackened cooking originated in New Orleans over 30 years ago. Traditionally done with your protein being coated in oil and your blackened seasoning blend. An iron skillet and a drizzle of oil the protein dropped in the hot skillet flipping only once - after it is blackened on the bottom. This gives a great texture and flavor to your dish!
